چرا تولید آرد کامل در کارخانجات با اقبال مواجه نشده است؟

دلایل متعددی است که تمایلی به تولید این آرد وجود ندارد:
۱- بخشی از آن نا آگاهی مردم و جامعه از اثرات مثبت نانهای سبوس‌دار در حوزه سلامت است که بانیان و مروجان در این زمینه آگاهی لازم و کافی را در اختیار عموم قرار نداده اند، بنابراین هیچگاه تقاضای سفت و سختی از طرف جامعه به عنوان یک الزام مطرح نشده است.

۲- نانوایی آرد کامل به مراتب سخت تر از از نانوایی آرد سفید است چون وجود سبوس روی کیفیت پخت اثر منفی میگذارد. در حوزه نانوایی نیز متاسفانه آموزشها جسته و گریخته بوده و علم نانوایی همیشه مورد ظلم قرارگرفته است در حالی که معتقدم نانوایی باید به عنوان یک تخصص رشته دانشگاهی داشته باشد .

۳- اما در بحث تکنیکی تولید آرد کامل با سبوس تقریبا ۷% در آسیابهای غلطکی دغدغه های زیادی وجود دارد. کشش بازار به سمت آردهای صنعتی تولید سبوس را افزایش داده و این افزایش سبوس با ارزش ترین قسمتهای گندم را بجای انسان نصیب دام کرده است.

تولید آرد کامل نیاز به اضافه کردن اجزای مفید سبوس به آرد دارد و چون سبوس اثر مخرب روی کیفیت پخت دارد باید اندازه ذرات سبوس در رنج آرد قرار بگیرد تا اثر منفی سبوس روی حجم نان کمتر شود و این یعنی ضریب های مخصوص در آسیابانی در سطح غلطک و سطح توری باید افزایش یابند، همچنین دستگاههای جانبی آسیاب مانند بران فینیشرهای متعدد به آسیاب اضافه شود .از آنجا که آرد کامل دارای بخش زیادی از سبوس گندم می‌باشد لازم است گندم با دقت و شدت بیشتری تمیز و مشروط شود تا آلودگیهای گندم برای آسیاب به حداقل برسد .
و در اخر چون آرد کامل بدون هیچ آرد جانبی استحصال می‌شود دیاگرام فوق العاده ای می‌طلبد که کوچکترین اشتباهی در فرآیند تولید نباشد و برای خطوطی‌که فرایند تولید کوتاه است کاهش ۳۰% از ظرفیت اجتناب ناپذیر است.
استحصال ۹۳% آرد از خط تولید با در نظر گرفتن اثر مخرب سبوس روی کیفیت پخت و تلاش برای استحصال سبوس‌در ابعاد و اندازه های ذرات آرد برای جبران افت کیفی کار ساده ای نیست و مهارت و تخصص بالای می‌طلبد.
