نان یکی از مهمترین غذاهای مردم در اکثر نقاط جهان بوده و بیشترین سهم را در هرم غذایی افراد دارد. به همین دلیل بهتر است نان از ارزش تغذیهای بالا، خواص مفید و درمانی لازم برخوردار باشد. به عبارتی بکارگیری نان با فرمولاسیون مناسب میتواند تامینکننده بسیاری از املاح و ویتامینهای مورد نیاز بدن باشد و در نتیجه از بروز بیماریهای مختلف نظیر کمخونی، پوکی استخوان، سوء تغذیه و دیابت پیشگیری کند (رجبزاده، ۱۳۸۲). از اینرو، در این مقاله به مرور جدیدترین بررسیهای صورت گرفته در زمینه استفاده از آرد موز، پوره کدو سبز و آرد دال عدس در تهیه نان تست و نان تست خمیرترشی و همچنین کاربرد لاکتوباسیلوسروتری در تهیه نان پروبیوتیک خواهیم پرداخت.

در تحقیقی که توسط موحد و همکاران (۱۳۹۲) بر روی آرد گندم حاوی آرد موز صورت گرفت، مشخص گردید که افزودن سطوح متفاوت آرد موز، تاثیر مثبتی بر کلیه ویژگیهای رئولوژیکی و ارگانولپتیکی نانهای تست تولیدی داشت. همچنین آنها براساس نتایج حاصل از آزمون فارینوگراف نمونههای خمیر نشان دادند که بین افزودن سطوح بیشتر آرد موز و خصوصیات فارینوگرافی رابطه مثبت وجود داشته به طوری که میزان جذب آب در نمونههای حاوی آرد موز در قیاس با نمونه شاهد افزایش یافت،

باکتری اسید لاکتیک از قابلیت تولید ترکیبات ضد میکروبی نظیر اسیدهای آلی، دیاستیل، استون، پراکسید هیدروژن، پپتیدهای ضد قارچی و باکتریوسینها نیز برخوردارند که در مقابل طیف وسیعی از عوامل بیماریزا و مولد فساد موثر میباشند. برخی از متابولیتهای تولیدی توسط باکتریهای اسید لاکتیک موجود در خمیرترش نظیر پلیساکاریدهای خارج سلولی و آنزیمهای پروتئولیتیک و آمیلولیتیک آنها نیز در تاخیر بیاتی نان تولیدی موثر هستند (آرندت و ریان، ۲۰۰۷).

در تحقیقی که توسط عمرانی و همکاران (۱۳۹۶) بر روی تاثیر آرد دال عدس بر کیفیت نان تست صورت گرفت، مشاهده شد که با جایگزینی و افزایش درصد جایگزینی آرد دال عدس به ترتیب به میزان ۱۰، ۲۰ و ۳۰ درصد بدلیل نقص به وجود آمده در میزان گلوتن توسط جایگزینی آرد گندم با آرد دال عدس موجب ناپایداری شبکه گلوتنی و سست شدن پیوندهای دیسولفیدی بین اجزای ماتریکس خمیر شده و توان کافی برای نگهداری گازهای حاصل از تخمیر را از دست داده و منجر به کاهش معنیداری در حجم مخصوص نسبت به شاهد شده بود.

نتیجه گیری

امروزه با توجه به عوارض استفاده از داروهای شیمیایی، مصرف داروهایی با منشاء طبیعی ضروری به نظر میرسد. از آنجایی که خوراک صحیح میتواند به عنوان اولین دارو در درمان بسیاری از بیماریها مورد استفاده قرار گیرد، بنابراین استفاده از نانهای تست و خمیرهای حاوی مواد طبیعی چون آرد موز، پوره کدو سبز، آرد دال عدس و غیره در رژیم غذایی افراد به دلیل دارا بودن ارزش تغذیهای بالا و بهبود ویژگیهای رئولوژیکی خمیر و بهبود ویژگیهای ارگانولپتیکی نان منطقی به نظر میرسد.
