عوامل موثر در بهبود کیفیت آرد و نان

امروزه در غالب کشورهای دنیا برای بهبود کیفیت نان و افزایش زمان ماندگاری آن از مواد افرودنی بسیار متنوعی کمک می گیرند دلایلی که به خاطر آن این موارد افزودنی در فرمول بکار برده می شوند عبارتند از:

-حفظ کیفیت محصولات، افزایش جذابیت محصولات، حفظ تازگی محصولات، اصلاح تفاوت کیفیت موارد خام مصرفی ( آرد و …) ، تسهیل در مکانیزاسیون تولید محصولات، از بین مواد افزودنی مختلفی که به نان برای رسیدن به اهداف فوق اضافه می شوند می توان از امولسیفایرها نام برد.

مهمترین خواصی که از افزودن این مواد به نان انتظار می رود عبارتند از:

بهبود حمل و نقل خمیر و تقویت استقامت آن
بالا بردن درصد جذب آب خمیر
بهبود پاسخ خمیر به زمان استراحت
شوک و عمل تخمیر
بهبود کیفیت
بافت و مغز نان شامل رنگ روشنتر و بافت اسفنجی بهتر و یکنواخت
بالا بردن خاصیت ورقه پذیری نان
بهبود کیفیت پوسته نان
امواسیفیه کردن چربی ها در نان و در نتیجه کاسته شدن از مقدار روغن مصرفی
قرنیه شدن و یکنواختی محصولات
بالا بردن عمل تولید گاز در زمان تخمیر و در نتیجه کاسته شده از مقدار مخمر مصرفی
سریعتر شدن زمان تخمیر و بالا بردن حجم نان تولیدی
افزایش زمان ماندگاری نان

با مشخص شدن تاثیر غیر قابل انکار کیفیت نان مصرفی بر تامین انرژی و کالری مورد نیاز بدن انسان ( حدود ۶۰درصد کالری) مورد نیاز بدن از طریق مصرف غلات و به خصوص نان تامین می شود) بررسی خصوصیات کیفی ارقام گندم نان، به عنوان شاخصی از کیفیت نان تولیدی، از اهمیت خاصی برخوردار شده است بی شک تهیه، تولید و عرضه نان سالم و بهداشتی در حفظ سلامت جامعه موثر خواهد بود. برای نیل به مناسبترین الگوی نان، لزوم تعیین کیفیت و ارزیابی موارد زیرپیشنهاد میگردد. فرآیند نان، درجه استخراج آرد، تخمیر (زمان و نوع) پخت ( درجه حرارت و زمان) زمان قابلیت نگهداری نان ( در نانواییها و منازل)

ارزش تغذیه ای: میزان پروئین تعیین کیفیت پروتئین، ویتامینها و املاح، قابلیت دسترسی آنهابه ویژه عناصر آهن، روی، کلسیم، میزان و نوع فیبره، میزان اسید فتیک و تاثیر فرایند بر آن، مطلوبیت، میزان پذیرشی شکل و حجم، پوکی و تخلخل، شرایط ارگانولپتیک آن، میزان ضایعات نان، موارد بهداشتی.

۳ عامل در بهبود سطح کیفی نان موثر است.

افزایش کیفیت آرد و انتظارات پیش روی از کارخانجات آردسازی.
اصلاح و بهبود ساختارها که رقابت و خلاقیت را در پی دارد.
ضرورت بالا بردن سطح کیفی پخت و فراوری خمیر و نان با ارایه آموزشهای مورد نیاز

انتخاب آرد نیز بسته به نوع نان مورد نظر متفاوت است آرد حاصل از گندمهای سخت مثل گندم قرمز بهاره مناسب برای تولید نان با روش تخمیر و آرد گونه های گندم نرم قرمز زمستانی، نرم سفید برای تولید نان با روشهای شیمیایی عمل اوری خمیر مناسب می باشد.

آرد مناسب برای نان از گندمهای سخت به علت پروتئین و کیفیت بالای گلوتن آن حاصل می شود کیفیت گلوتن موجود در آن باید از کیفیت خوبی برخوردار باشد تا بتواند گازهای تولید شده در مراحل مختلف را در خود حفظ نماید.

چگونگی آسیاب و نوع آسیاب نیز در کیفیت آرد موثر است گرانول های نشاسته به هنگام تبدیل گندم به آرد بر اثر صدمات مکانیکی دستگاه آسیاب، آسیب می بیند و نشاسته آسیب دیده ای که بدین ترتیب ایجاد میشود. نقش مهمی را در فرآیند پخت ایفا می کند.

بعد از انتخاب گندم و روش صحیح تولید آرد و روش مناسب طبخ نان شیوه نگهداری بعد از پخت نان نیز در ماندگاری بیشتر آن بی تاثیر نیست. نان های مسطح سنتی ایران به سرعت بیات شده و به همین دلیل موجب افزایش ضایعات میشود مسئله بیات شدن نان یکی از مسائل مهم در صنعت نان است و از جنبه اقتصادی اهمیت زیادی دارد.

طی فرآیند بیاتی ویژگی های کیفی نان از قبیل، بو، طعم و مزه و قابلیت جویدن محصول تغییر می کند در نان بیات قابلیت جویدن و تراکم یدمتیری کاهش مییابد و با کاهش رطوبت در مغز نان تردی و پوکی نان را از دست رفته و نان حالت چرمی به خود میگیرد.

مهمترین تغییری که طی بیاتی نان صورت می پذیرد افزایش تدریجی سفت بافت است یکی از دلایل ضایعات نان نیز بیات شدن سریع نانهای سنتی است.

علاوه بر مطالب ذکر شده رعایت یک سری اصول نگهداری در منازل نیز به کاهش ضایعات نان کمک می کند نانی که از تنور بیرون می آید استریل است ولی بلافاصله بعد از خروج از تنور و سرد شدن به اسپور کپک های موجود در محیط آلوده میشود و اگر در نگهداری آن دقت نشود به سرعت کپک خواهد زد برای جلوگیری از کپک زدن و حفظ نان از بیاتی زودرس ، باید در خنک کردن و نگهداری آن دقت کرد.

نان بعد از خروج از تنور باید سرد شود و برای حفظ بافت آن هرگز نباید به تعداد زیاد روی هم چیده شود در منزل و یا شرایطی که بخواهیم مقدار زیادی نان را برای مدت بیشتر از یک روز تا چند ماه نگهداری کنیم باید از روش خشک کردن و یا از روش انجماد استفاده کنیم مثلاً برای نگهداری نان بربری نمیشود آن را خشک کرد ولی با انجماد می توان کیفیت و تازگی آن را برای چند روز حفظ کرد.

درجه حرارت یخچال فقط از کپک زدن نان به مدت چند روز جلوگیری می کند ولی در بیاتی آن اثر منفی دارد با رعایت موارد فوق و انتخاب گندم مناسب و روش صحیح آسیابانی و روش نگهداری مناسب باعث افزایش آموزش تغذیه ای نان و بهبود کیفیت آن شد بلکه مقدار قابل توجهی کمک به کاهش ضایعات آن می کند.

در آخر ایران یکی از پر مصرف ترین کشورها در زمینه مصرف نان است نان همواره در نزد ایرانیان از جایگاه ویژه و خاصی برخوردار بوده و غذای اصلی مردم کشورمان را تشکیل میدهد بخش قابل توجهی از پروتئین و انرژی مورد نیاز مردم از نان تامین میگردد.
