تاثیر سختی گندم بر فرآیند آسیاب و کیفیت آرد

مسلماً نوع و کیفیت گندم ورودی به یک سیستم آسیاب نقش تعیین کننده ای در آرد خروجی ایفاء می کند و نمی توان از گندم نامناسب توقع آرد با کیفیت داشت. دانه گندم دارای خصوصیات فیزیکی و شیمیایی است که مفهوم کیفیت گندم را براساس آن پارامترها بیان می نمایند.

یکی از خصوصیات فیزیکی مهم گندم سختی آن است. منبع ایجاد تفاوت در سختی گندم ها نحوه به هم پیوستگی گرانول های نشاسته گندم است. گندم سخت پیوستگی بیشتر و فضای خالی کمتری بین گرانول های خود دارد، بنابراین پیوندهای مستحکم تری بین گرانول های خود دارد که گسستن آنها از یکدیگر را دشوار می کند، این گندم ها غالباً پروتئین بیشتری نیز دارند.

کاربرد سختی گندم

امروزه از گندم دروم با پروتئین بالای ۵/۱۲ درصد جهت تولید محصولات خمیری مانند ماکارونی، اسپاگتی، نودل و ورمیشل استفاده می گردد، زیرا خمیر حاصل از آنها واکنش خوبی در هنگام اکسترود شدن از خود نشان می دهند، برای نان و محصولات خمیری نیز گندم سخت با پروتئین بیش از ۱۱ گزینه مناسبی خواهد بود و جهت پخت کیک، شیرینی، کوکی و بیسکویت نیز می توان از گندم نرم با پروتئین پائین استفاده نمود.

جهت بررسی میزان سختی گندم می توان از آزمون PSI طبق استاندارد AACC ۵۵-۳۰ استفاده نمود، همچنین می توان از دستگاه های SKCS و یا برابندر نیز استفاده نمود.

تاثیر در فرآیند آسیابانی

نکته ای که محرز است این است که میزان انرژی مصرفی جهت شکافتن دانه گندم نرم و سخت متفاوت است، در یک بررسی مشخص گردید جهت شکافتن یک کیلوگرم دانه گندم نرم به حدود ۴۶ کیلوژول نیرو نیاز است در حالی که این مقدار در گندم سخت به حدود ۱۲۴ کیلوژول افزایش پیدا نمود. مسلماً این تفاوت در انرژی مصرفی سبب تغییراتی در روند مشروط سازی و آسیاب گندم می گردد.

مطابق تحقیقات به عمل آمده در بخش مشروط سازی می بایست رطوبت گندم سخت را به حدود ۱۶ تا ۱۷ درصد رسانید و جهت گندم نرم رطوبت ۱۵ درصد کافی می باشد، این تفاوت بدلیل متراکم بودن و الاستیک بودن اندوسپرم گندم سخت می باشد. بنابراین گندم سخت جهت جذب این رطوبت نیاز به زمان خواب بالاتری (حدود ۲۴ تا ۳۶ ساعت) نیز دارد، زیرا که بافت متراکم تر پیشروی رطوبت در ابعاد مولکولی را کند می نماید و گندم نرم زمان خواب کمتری را می طلبد (حدود ۱۲ ساعت (در بخش آسیاب شکنندگی گندم سخت نسبت خرد شدگی به تراش بیشتری را حاصل می نماید، بدین معنی که گندم سخت شکنندگی بیشتر و قابلیت تراش لایه های اندوسپرم بدون شکنندگی سبوس کمتری ایجاد می نماید. از طرف دیگر در گندم نرم که لایه های اندوسپرم چسبندگی بیشتری به سبوس دارند نیاز به مراحل تراش بیشتری احساس می گردد. لذا در آسیاب گندم سخت مراحل برک کمتری نیاز است و آسیب نشاسته بیشتری هنگام خرد نمودن اندوسپرم در سایز سمولینا و میدلینگ برای رساندن آنها به سایز آردی تولید می گردد

.در الک ها مسلماً وجود استحکام اندوسپرم گندم های سخت سبب تولید ذرات مغز با سایز میانی می گردد که حرکت راحت تر و جداسازی بهتر با مساحت توری کمتری را حاصل می نماید. این در حالی است که در گندم های نرم چسبندگی ذرات اندوسپرم به یکدیگر و به سطوح سبب می شود هنگام کاهش سایز ذرات جدا شده اندازه ای متفاوت ایجاد نمایند. لذا ۵۰ درصد کل آرد تولیدی با این گندم ها سایزی کمتر از ۵۰ میکرون دارند و این در حالی است که این مقدار در گندم سخت ۲۵ درصد است.

متاسفانه به خصوص در برخی مناطق کشور این نکته که گندم متناسب با دیاگرام طراحی شده مصرف گردد رعایت نمی گردد. این اشتباه گاهاً بدلیل عدم آگاهی از این مهم، عدم توجه به آن، سوء مدیریت در ابعاد کلان و یا اجبار به مصرف گندمی متفاوت پیش می آید.

برای مثال هنگامی که گندم نرم به آسیاب طراحی شده برای گندم سخت تزریق می گردد این گندم نیازمند آسیابی با طول خط برک بلند برای تراش بیشتر اندوسپرم از روی پرک سبوس است، دقیقاً خلاف دیاگرام طراحی شده برای گندم سخت! نتیجه اینکه آسیابان مجبور می شود جهت جلوگیری از سرریز بار در والس های برک و فشار بیش از حد به غلتک ها ۱۰ تا ۲۰ درصد ظرفیت آسیاب را پائین بیاورد تا علاوه بر کارکرد صحیح در سیستم والس ها الک ها نیز بتوانند به درستی تفکیک را انجام دهند. مشکل مضاعف زمانی است که علیرغم تمامی این تلاش ها بدلیل نشاسته ای بودن جنس گندم های نرم، این نشاسته نرم بصورت پودر در والس های برک ایجاد مشکل و گرد کرده و ورودی والس و درب های آنها و برس ها را پر از گرد آرد نرم می نماید، نشاسته نرم چسبیده به پرک سبوس نیز بخوبی در برک ها تراشیده نشده و این بار به والس های DBr و گریدرها منتقل می گردد، این مشکل زمانی از حد می گذرد که رطوبت بالا بوده و هوا گرم باشد. نتیجه آنکه مصرف کننده با یک آرد نرم مرطوب اصطلاحاً پفکی روبرو می گردد که در ادامه مشکلات پخت نیز پیدا می کند.

در تزریق گندم سخت به آسیاب نرم اما مشکلی دیگر بوجود می آید. گندم سخت نیاز به خط برک کوتاه تر دارد زیرا که اساساً با خرد شدن و تراش اندوسپرم شکننده از روی سبوس مشکلی ندارند اما در این نوع گندم نسبت مغز درشت به آرد زیاد است که نیازمند خطوط ریداکشن بیشتر و مغزگیری بیشتر با استفاده از مغزگندم گیر دارد و این چیزی است که در دیاگرام طراحی شده برای گندم نرم وجود ندارد بنابراین عدم تفکیک درست مغز سبب بوجود آمدن مشکلاتی در پاکی بار و کاهش کیفیت به خصوص در تولید آردهای صنعتی می گردد.

تاثیر بر خصوصیات پخت

میزان پروتئین گندم و سختی آن با یکدیگر رابطه مستقیم دارد، در بررسی های به عمل آمده روی دو رقم گندم با سختی و دیگر ویژگی های متفاوت مشخص گردید گندم با سختی بالاتر (۵۷ PSI) نسبت به گندم با سختی پائین تر (۴۶ PSI) قدرت بالاتری در منحنی فارینوگراف از خود نشان داده و بنابراین این گندم حداکثر تنش برشی و کششی کمتری نشان می دهد.

همچنین در بررسی دیگری نیز ارتباط منفی بین اندیس سختی PSI و برخی پارامترهای آلئوگرافی شامل مقاومت خمیر و قابلیت کششی خمیر یافت گردید، به همین دلیل مصرف گندم سخت برای تولید آرد نول ماکارونی توصیه می شود و برای تولید آرد سمولینا از گندم دروم استفاده می گردد، لذا باید نسبت به محصول مورد نیاز گندم متناسب استفاده نمود.

همانطور که گفته شد گندم های سخت پروتئین بالاتری نسبت به گندم نرم دارند. در یک مطالعه با بررسی گندم های مختلف مشاهده گردید افزایش ۱ % پروتئین سبب پخت نان با ۲/۱ میلی لیتر حجم بیشتر می گردد، به جدول ذیل دقت نمائید.

با نگاهی اجمالی به داده های این جدول می توان دریافت پس از آسیاب گندم های سخت آردی با پروتئین بیشتر، اندازه ذرات درشت تر یا شکری تر، مالتوز و آمیلوز بیشتر، آسیب نشاسته بالاتر و متعاقباً جذب آب بیشتر نسبت به آرد گندم های نرم حاصل می شود.

با توجه به مشکلات ذکر شده مشخص است انتخاب نادرست گندم جهت تولید محصولی خاص ممکن است سبب بوجود آمدن محصولی دیگر با خصوصیاتی متفاوت از نیاز مصرف کننده گردد. متاسفانه امروزه در برخی کارخانجات به این مهم توجه نشده و یا در صورت توجه حمایت های کافی از سوی سازمان ها برای تهیه گندم متناسب با محصول مورد تقاضا انجام نمی گردد. حل این مشکلات نیاز به همکاری سازمان ها و مراجع ذی صلاح با تولید کنندگان این صنعت دارد.
