آیا خاکستر معیار مناسبی برای تشخیص است?

یکی از ویژگی های مورد توجه برای تشخیص نوع و کیفیت آرد خاکستر می باشد، اما آیا خاکستر معیار مناسبی برای تشخیص است؟

امروزه معیارهای متعددی برای ارزیابی صحت کارکرد کارخانجات آرد و دستیابی به محصول مورد نیاز در دسترس می باشد، یکی از این معیارها که در استاندارد ملی ایران و سازمان های ناظر بر عملکرد کارخانجات آرد مورد توجه است خاکستر آرد می باشد.

بطور کلی دانه گندم از کربوهیدرات (نشاسته و سلولز)، پروتئین، چربی، آب و مواد معدنی تشکیل شده است. هدف از آسیابانی نوین جدا کردن و کاهش سایز قسمت نشاسته ای گندم است. مواد معدنی گندم شامل آهن، منیزیم، کلسیم و پتاسیم موادی بسیار مفید و ارزشمند برای بدن انسان می باشند که بخش اعظم آنها در جوانه، سبوس و لایه آلورن گندم (لایه واسط بین مغز و پوسته گندم) است. این مواد تحت حرارت نمی سوزند. از ابتدا آسیابانان به فکر یافتن راهی برای تشخیص میزان تراش اندوسپرم از سطح سبوس (میزان استحصال) و میزان سبوس موجود در آرد بوده اند، بنابراین توانستند با سوزاندن آرد و خاکسترگیری از آن با توجه به روابط حاکم به میزان سبوس موجود در آرد و درصد استحصال نزدیک شوند. حال این سوال اساسی پیش می آید که چه عواملی روی میزان خاکستر تاثیر می گذارد؟ در ادامه به برخی از مهمترین عوامل تاثیرگذار اشاره می شود.

واریته گندم

ارقام مختلف گندم دارای ویژگی های متفاوتی هستند. بطور کلی گندم های معمول موجود خاکستری بین ۴/۱ تا ۲/۲ درصد دارند. این اختلاف بسیار زیاد ناشی از تفاوت در ویژگی های فیزیکی و شیمیایی دانه ها می باشد. ویژگی های فیزیکی مانند اندازه دانه ها و ویژگی های شیمیایی شامل نژاد و ژنتیک گندم.

در بخش ویژگی های فیزیکی می توان گفت سبوس لایه سطحی و اندوسپرم حجم دانه است، پس با کوچک شدن دانه ها اندوسپرم بسیار بیشتر از سبوس کاهش می یابد در حالی که با این توصیف اگر شرایط آسیاب تغییر نکرده باشد سبوس بیشتری حین فرآیند وارد آرد خواهد شد. چیدمان و نسبت تقسیم مواد معدنی و همچنین میزان وجود مواد معدنی به شرایط بذر، زمین، زمان کاشت و داشت و برداشت و شرایط جوی مربوط است. بذر نامناسب توان و ظرفیت جذب مواد معدنی را ندارد، زمینی که استراحت پس از برداشت کافی نداشته و خالی از املاح معدنی است مسلماً نمی تواند دانه ها را از مواد معدنی غنی نماید و باران ناکافی یا بیش از حد و گرمای هوا و زمان بندی نامناسب کشاورز نیز موارد بسیار مهمی در جذب مواد معدنی توسط گندم هستند و همه این ها در مجموع ویژگی های شیمیایی تاثیرگذار در بخش واریته گندم می باشند که مقدار و چیدمان مواد معدنی در دانه را تغییر می دهند.

افت های همراه گندم

ناخالصی های همراه گندم چه مفید (از جنس گندم) و چه غیرمفید (متفاوت از گندم) تاثیر منفی بر عملکرد آسیاب خواهد گذاشت. متاسفانه به خصوص در سال های اخیر با واسطه گری و دلالی های غیرمجاز در خرید و فروش گندم و یا حین فرآیند نگهداری آن شاهد افزایش غیرباور افت های همراه گندم بودیم که نیازمند توجه سازمان های نظارتی در این خصوص است. در بالارفتن خاکستر توسط افت های غیرمفید جای هیچگونه بحثی وجود ندارد اما افت های مفید نیز چندان برای آسیاب مفید نیستند. اگر دانه را بصورت یک حجم درنظر بگیریم، اندوسپرم حجم دانه و سبوس سطح دانه است، تغییرات حجم با توان سه نسبت به ابعاد تغییر کرده حال آنکه تغییرات سطح با توان دو. به عنوان مثال اگر ابعاد گندم نصف شود (گندم شکسته یا ریز) سطح یک چهارم و حجم یک هشتم می گردد. بنابراین در دانه های شکسته اندوسپرم بیشتر از سبوس کم شده و خاکستر بالاتر است. درخصوص دانه های چروکیده که حجم (مغز) خود را از دست داده اند نیز وضعیت به همین گونه است و این افت در هر صورت سبب افزایش خاکستر آرد می شود.

شرایط آسیاب

دو بخش اصلی یک کارخانه آرد شامل مشروط سازی و آسیاب هر دو بر میزان خاکستر آرد تاثیر گذارند. مشروط سازی شامل نم زنی و خواب گندم در صورتی که مطابق گندم و ماشین آلات و دیاگرام تنظیم نشود یا سبب خرد شدن بیش از حد سبوس در ابتدای مسیر و تغییر مسیر آن به سمت آرد شده که البته قسمتی از اندوسپرم نیز کاملاً همراه سبوس ریز می شود و تفکیک آن از سبوس عملاً ناممکن می گردد که خاکستر آرد را بالا می برد و یا سبب عدم توان تراش کامل اندوسپرم از روی سبوس در طول خط شده که خاکستر آرد را پائین آورده و قسمتی از آرد را همراه سبوس از خط خارج می نماید. دیاگرام نامناسب معزل دیگری است که متاسفانه برخی دیاگرامیست ها از آن غافل شده و از یک یا چند دیاگرام ثابت برای همه نوع گندم و شرایط جوی و محیطی استفاده می نمایند. در بخش تنظیم آسیاب از آنجا که آلورن خاکستری معادل با ۸ درصد و سبوس ۵/۲ درصد دارد، اگر بتوان سلول های آلورن را از سطح سبوس تراش داد بدلیل خاکستر بالای آن می توان شاهد مقداری افزایش خاکستر آرد بود اما نمی توان تضمین کرد که بتوان همه آلورن دانه را تراش داد و یا در حین تراش سبوس دانه را خرد نکرد و اما باید به این نکته همواره توجه کرد که شرایط آسیاب همواره در حال تغییر است، تغییراتی چون رقم گندم، افت همراه آن، میزان و پراکندگی آب وارد شده به گندم در مشروط سازی و . . . مواردی است که باعث می شود آسیاب مرتباً نیاز به نظارت داشته باشد. لذا توصیه اکید می گردد مدیران نسبت به آموزش پرسنل توجه ویژه داشته باشند. مجموع این موارد بخش تاثیر شرایط آسیاب بر تغییر خاکستر آرد خروجی است.

به تمامی موارد بالا موارد دیگری را می توان اضافه نمود که از حوصله بحث خارج است اما آیا تمامی این موارد در ساز و کار کنترل کیفی آرد برای بخش خاکستر گندم لحاظ شده است؟

در آخرین تجدیدنظر استاندارد ملی آرد گندم (استاندارد ۱۰۳) در جدول رابطه درجه استخراج با خاکستر آرد گندم (پیوست ب استاندارد) برای آردی که از ۹۸ درصد دانه گندم تولید شده باشد خاکستر ۸/۱ تعریف شده است حال آنکه بسته به موارد پیش گفته این مقدار برای دانه گندم از ۴/۱ تا ۲/۲ متغیر می باشد، پس نمی توان در مورد مقادیر ذکر شده خاکستر آرد و توازی آنها با میزان درصد آرد استخراج شده و یا سبوس استحصال شده نظر قطعی داد به علاوه اینکه تقسیم میزان مواد معدنی در آلورن، سبوس و جوانه در انواع گندم متفاوت می باشد.. با جمع بندی همه موارد گفته شده می توان دریافت بررسی درستی کارکرد یک کارخانه و یا صحت یک نمونه آرد و میزان سبوس موجود در آن فقط با استفاده از خاکستر در برخی موارد اشتباه محض است که هم اکنون یکی از معیارهای نظارت بر کارکرد و رده بندی کارخانجات تولید آرد می باشد.

بصورت عملی نیز ممکن است مشاهده نموده باشید که در واحدهای تولیدی با تغییر نوع گندم و یا تغییر افت و مشروط سازی میزان خاکستر آرد تغییر می نماید در حالی که درصدهای تولید آرد و سبوس و تنظیم آسیاب بدون تغییر می باشد.
