اختلاط آرد یا گندم؟ کدامیک کارآمد خواهد بود؟

اختلاط آرد و یا گندم در صنعت آسیابانی همواره مورد توجه آسیابانان بوده و از آن به عنوان راه حلی مناسب برای ارتقاء کیفیت و یا تعدیل نوسانات کیفی آرد های تولیدی استفاده می گردد. سوالی که مطرح می باشد آن است که در فرآیند آسیابانی، آیا اختلاط در گندم تاثیر بیشتری خواهد داشت و یا آرد تولیدی؟

لزوم اختلاط

عملیات اختلاط در صنعت آسیابانی مرحله ای اجتناب ناپذیر در این فرآیند است و مطابق یک اصل منطقی در آسیابانی هیچ گندمی به تنهایی نمی تواند تمامی مشخصات کیفی مورد نیاز برای آرد تولیدی را تامین نماید، به همین دلیل در طراحی استاندارد کارخانجات آرد همواره زیر ساخت و تجهیزات اختلاط در گندم مورد استفاده و همچنین آرد های تولیدی یک کارخانه در نظر گرفته می شوند اما در ایران به دلیل نوع نیاز بازار و همچنین سیستم های سهمیه بندی گندم و آرد در گذشته، برای کاهش هزینه های تاسیس یک کارخانه و رسیدن به بازدهی سریعتر آن، کمتر به این زیر ساخت ها توجه شده بود که با توجه به تغییر در بازار گندم و آرد در سالهای اخیر و توجه بیشتر به ارتقای کیفیت در این تجارت، لزوم اختلاط انواع گندم و یا آرد های تولیدی مورد توجه بیشتری قرار گرفته است.

انواع روش های اختلاط

۱ – اختلاط گندم به عنوان ماده اولیه مورد استفاده در کارخانجات آرد امریست که بسیار متداول بوده و گندم دریافت شده در کارخانجات آرد مورد ارزیابی کیفی قرار خواهد گرفت تا با شناسایی مشخصات کیفی آن و با توجه به نوع آرد مورد نظر جهت تولید از انواع واریته های گندم به نسبت های تعیین شده استفاده گردد. در این فرآیند با توجه به زیر ساخت های موجود در یک کارخانه می توان انواع گندم را پیش از ارسال به فرآیند بوجاری و مشروط سازی با یکدیگر مخلوط نموده و یا عملیات اختلاط را پس از مشروط سازی و فبل از ورود ماده اولیه به آسیاب اجرا نمود.

در مبحث اختلاط لازم است عواملی مانند مشخصات کیفی مورد نیاز برای تولید، بهای انواع واریته های گندم با توجه به مشخصات کیفی آن ها و همچنین میزان دسترسی به انواع خاصی از گندم مورد نیاز را در نظر گرفت که با توجه به تخصصی بودن فرآیند اختلاط و تاثیر آن در کیفیت محصول تولیدی، راندمان آسیابانی و همچنین بهای تمام شده آرد تولید شده عموما از روش محاسباتی به نام ماتریس پیرسون برای محاسبه درصد های متفاوت از انواع گندم استفاده می گردد تا همزمان با دست یابی به کیفیت مورد نظر در آرد تولیدی و حفظ راندمان تولید، کاهش نوسانات کیفی و کاهش بهای تمام شده تولیدات نیز به دست آید.

۲ – اختلاط آرد تولید شده به عنوان یکی از روش های اختلاط در کارخانجات آرد مورد توجه است که این امر به خصوص برای حصول به دقیقترین مشخصات کیفی در آرد های تولیدی و یا تولید انواع آرد های سفارشی و تخصصی بسیار اهمیت دارد. با آنالیز کیفی انواع آرد تولید شده در کارخانجات و ذخیره سازی تولیدات بر مبنای مشخصات آن ها می توان در زمان بارگیری و بسته بندی آرد، میزان مورد نظر انواع آرد برای حصول به کیفیتی خاص را تعیین نمود تا در نهایت آرد تولیدی به صورت ترکیب انواع آرد به مرحله بسته بندی ارسال گردد.

۳ – اختلاط آرد در محل مصرف به طور کلی بهترین و موثر ترین شیوه برای حصول به کیفیت مورد نظر است. مصرف کنندگان آرد بهتر از هر منبعی نسبت به مشخصات آرد مورد نیاز خود آگاهی دارند و واکنش های مختلف حین پخت و تولید را می شناسند. مطابق با اصل اعلام شده در مورد تامین مشخصات کامل آرد تولیدی از گندم مورد استفاده که پیش از این عنوان شد، می توان اصل مذکور را برای صنایع مصرف کننده آرد نیز تعمیم داد به گونه ای که هیچ آردی به تنهایی نمی تواند تمامی مشخصات مورد نظر برای تولید انواع محصولات آردی را تامین نماید.

تاثیر اختلاط آرد در محل مصرف از سرعت تشخیص بالاتری برخوردار بوده و میزان ضایعات را به صورت کاملا موثر کاهش خواهد داد به همین دلیل بهتر است که مصرف کنندگان آرد، منابع متنوع و مختلفی را برای تامین همزمان آرد مورد نیاز خود شناسایی نموده تا بتوانند به راحتی با اختلاط انواع آرد به کیفیت مطلوب و مناسب برای تولیدات خود دست یابند.

شرایط مناسب برای اختلاط

آنچه بیش از هر عاملی می تواند بر فرایند مناسب و صحیح اختلاط در تولید آرد موثر باشد، دسترسی به مواد اولیه به صورت آسان و با مقادیر مناسب است تا از این طریق بتوان کمترین میزان نوسان و تغییرات کیفی در خطوط تولید را بدست آورد . کارخانجات آرد سازی باید بتوانند به راحتی و با مقادیر مناسب به انواع واریته های گندم دسترسی داشته و مصرف کنندگان آرد نیز باید توان مناسب برای تامین انواع آرد با مشخصات مطلوب را داشته باشند. این دسترسی با توجه به مشخصات کیفی و مقادیر متنوع تولید شده در مورد گندم و یا آرد می تواند شرایط متفاوتی داشته باشد. در مناطقی که تولید و دسترسی به گندم مناسب است، فرآیند اختلاط نیز می تواند به راحتی صورت پذیرد اما در مناطقی با محدودیت تولید گندم می توان با وسعت بخشیدن به بازار آرد و امکان تامین آرد های متنوع توسط مصرف کنندگان آن، امکان اختلاط و در نتیجه تولید محصول با کیفیت را فرآهم آورد.
